Breakfast – POM, Pineapple And Green Grape Green Smoothie

1/2 cup POM juice
1 cup green grapes
1 cup pineapple
2 cups spinach
1 tbsp chia seeds
1 tbsp hemp hearts
2 tbsp ground flax

 

 

 

Lunch – leftover Pizza (1 slice of Toppers Deluxe sans mushrooms, add hot peppers, and 1 slice of Toppers Turkey Pepperoni Sensation)

Dinner – Refrigerator Oats – didn’t feel like cooking and this was leftover from Sunday morning. Happy to report, tastes just as good after an extra day in the fridge.

Snack – 1/2 cup Vanilla Greek Yogurt with 1/4 cup Aloha Love Crunch.

1 tbsp hemp hearts

Lunch – Santa Fe Salad with Grilled Chicken– today Tanner and I had lunch with my friend Pam. We went to Boston Pizza and both Pam and I enjoyed a salad off of their Summer Menu. It was so good, and big, I could barely finish it!

Dinner – Green Smoothie #20 – Strawberry Grape
. Since I was still full from lunch, dinner was going to be a Green Smoothie and a leftover piece of steak…after the smoothie, I didn’t have room for steak, so dinner just ended up being a smoothie, good think I added a scoop of protein to it!

Ingredients:
2 cups baby spinach
1 cup green grapes
1 cup fresh strawberries
1 scoop vanilla protein powder
1 tbsp hemp hearts
1 tbsp chia seeds
2 tbsp ground flax

Snack – 9 Dark Chocolate Covered Almonds – I just needed a little something…maybe it’s because I didn’t have a proper dinner…who knows, but these almonds sure hit the spot!

Lunch – Green Smoothie # 15 – POM Pineapple. Yesterday’s Green Smoothie was so good, I made it again today. Yummo!

Evening Snack – one cup of David’s Tea – I’m not even sure what kind it was! My sister has been raving about this tea forever, so I went over and enjoyed a cup as we watched Nik Wallenda walk across Niagara Falls on a tightrope. Did you watch it? What did you think?

Lunch– today we had a picnic lunch at the slash pad. We had carrot and red pepper sticks, ham and cheese wrap, Kashi Zesty Salsa crackers, and for dessert, an Eat Clean Chocolate Chip Cookie.

Lunch – Green Smoothie #12 – Tropical Fruit Smoothie

Ingredients:
1 cup pineapple
2 cups spinach
1 cup almond milk
1 kiwi
1 tbsp ground flax seed
1 tbsp hemp hearts
1 tbsp chia seeds

 
 

 

 

Afternoon Snack – Aloha Love Crunch and a piece of Cheese – I saw this granola in the organic section at the grocery store and thought I needed to give it a try. Well, it’s freaking delicious! Get some…today…you will love it!

Dinner – Eat Clean Ham, Cheese and Broccoli Casserole– One word – AMAZING! This is by far, the BEST Eat Clean recipe I have made yet! Even my husband LOVED it!!

However, the recipe said it would only be 10 minutes of prep time…which was a total lie! It seriously took me about 45 minutes to get it all chopped and sorted before I was actually able to put it in the oven to cook. BUT…it was totally worth it! Horrible! I slept from about 11 until 1:30, when Tanner woke to eat, then did not fall back to sleep until about 5 this morning. At least the kids slept until 7!

Breakfast – Starbucks Chai Latte – I know I said I was giving up the Chai Latte for my 40 day Clean Eating Challenge, but I couldn’t resists this morning…let’s just say it was a little birthday treat compliments of Starbucks. Did you know you get a free drink on your birthday?

Lunch – this afternoon I was heading out to see a movie with a friend if mine, so I packed up a lunch and snuck it in with me. Since I already had had a treat today I figured I needed to be armed with healthy foods to resist the delicious movie theater snacks….m&m peanuts have to be my absolute favourite!

So, I took a Green Smoothie, carrot sticks and hummus, and crackers and cheese. I also packed a Lara Bar in case I was still hungry after all that, but I didn’t end up eating it!

Dinner – It is my belief that you should not have to cook yourself dinner on your birthday, and since my husband was working, the kids and I headed out for a quick bite to eat. I enjoyed a Greek Salad with Grilled Chicken. One of the few Clean options on the menu.

Breakfast – Green Smoothie #5Mixed Berry Banana…again! A little tweaking = delicious!

Ingredients:
2 cups baby spinach
1 cup PC Organics Unsweetened Almond Beverage
1 cup Europe’s Finest Frozen Mixed Berries
1/2 cup vanilla Greek yogurt
1 tbsp hemp hearts
1 tbsp chia seeds

Morning Snack- the last 2 (finally) Eat Clean Chocolate Walnut Brownies! I’m definitely going to make these again, but will either either freeze half right away, or make sure I have lots of people to share with!

Lunch – Today I had a lunch date with my friend Melissa and her little guy Dawson. We met at a little restaurant down near Fairy Lake called Cachet…the food was amazing!

I enjoyed a Pear Salad with Goat Cheese and Pecans (with added Chicken) and Melissa had a Turkey Club on a Croissant with a side Caesar Salad.

Dinner – Eat Clean Chicken Quesadilla Casserole– This recipe is another one from Eat Clean Classic Comfort Foods 1012. This recipe was quick and easy to make, but didn’t turn out very ‘casserole-ish’. Maybe it was just mine, but it just fell apart and basically ended up being a pile of beans and corn with some chicken tossed in. There was very little cheese, and since it was only sprinkled on top towards the end of cooking, it didn’t help at all in keeping it together. It did taste pretty good, but overall, I was a little disappointed. This might be the first Clean Eating recipe that I probably won’t make again…well, at least not without changing it up a bit!

Clean Eating Challenge: Day 14

Well it’s been two weeks since I started my 40 Day Clean Eating Challenge. I needed a little motivation, and something to hold me accountable for my eating, and I can honestly say, it’s working. Documenting my clean eating journey has definitely made me consider what I’ve been eating, has forced me to cook dinner (something I really don’t enjoy doing), and even caused me to give up Chai Latte (most most favourite warm drink ever)!
