Clean Eating Challenge: Day 39

Day 39




Breakfast – Oatmeal Pancake with Chocolate Chips and Fresh Strawberries


Lunch – Bento Veggie Rolls I saw these being made on my way out of the gym this morning and had to have them. I love spring rolls! So good. I didn’t eat the dip though, I think it was some kind of peanutty thing, but I was a little nervous, so I totally skipped it!


Snack – 1/2 cup Vanilla Greek Yogurt and a 1/4 cup of Chocolate Love Crunch This is my new go-to snack…so good!


Dinner – Grilled Cheese Sandwich on Ancient Grains bread – too tired and too hot to cook…I guess that really just boils down to too lazy:(


Snack – Pumpernickel Flatbreads with Cheddar Cheese


Water Consumption:

9 glasses – much better today!


5.5 hours – another crappy night, could not fall back to sleep again. Boo!

So, here are 7 Things About Me….

1. I’ve never had coffee…well that’s a bit of a lie…I’ve had one sip if coffee…and it was disgusting! Seriously, I don’t know how people drink that stuff!

2. My favourite food is pretty much anything Mexican…OMG…so good!

3. My husband and I met in high school – I was in grade 10, he was in grade 9. We worked at McDonalds together…funny enough, there are probably 5 other couples who we worked with that are married now too!

And no, we have not been together this whole time. We reconnected about 6 years ago.

4. I’m pretty active – when not held up in a boot cast – I play hockey, ball hockey, basketball, soccer, I workout and run. This not being able to do anything is killing me!

5. I am a high school phys.ed teacher. I’ve been doing it for 14 years and LOVE it! The weirdest feeling for me was in September 2010, the first September in 32 years that I did not go to school – I was on maternity leave with my daughter Ryan – and seriously, it was kinda stressful and really strange to not be going back to school. It only lasted a few days…then I was back to loving being off.

6. I have a dog named Clyde. He’s super awesome! And pretty cute too!

7. I once ate 16 cookies in one day…well, more like 3 hours….but who’s counting! Yes, I love sweets and candy…love, Love, LOVE them!

Clean Eating Challenge: Day 38

Breakfast- Mixed Berry Banana Green Smoothie

2 cups baby spinach
1 cup frozen mixed berries
1 banana
1 cup almond milk
2 tbsp ground flax





Lunch – Vanilla Greek Yogurt and Chocolate Love Crunch – not really a substantial lunch, but at least it was healthy!


Dinner – Eat Clean Waffles with Fresh Strawberries I think I’ve posted the link to this recipe before, but here it is again. These super healthy waffles are pretty tasty when topped with fresh fruit – and according o my husband – when loaded with maple syrup too!


Water Consumption:
8 glasses

5.5 hours – this was probably the crappiest sleep I have had in the last 38 days. Both kids were up in the night and I could not fall back to sleep after feeding Tanner…I was up from 3:15 until after 5…at least the kids slept in a bit so I could at least get some sleep!

Three Things Thursday

1. After a 3 week hiatus, I’m back a the gym. Yay!

I started the Venus Index Workout Program this week. I’ve done 2 workouts, and so far, I’m liking it! After Mondays workout my hamstrings were killing me! Yowza! That T-bend is effective! Wednesday’s workout was good, a lot of the same exercises as Monday, which was good cause I’m still trying to figure how much weight I should be lifting. Not sure what tomorrows workout looks like, I’m hoping for a bit of change…I guess we’ll see!

I also did a bit of cardio – 30 minutes on the stationary bike – both tuesday and this morning…not a great workout, but at least it was something. I definitely miss the high intensity cardio…5 more weeks…Ugh!

2. My little man has had a big week…

Sunday morning he woke up with his first tooth and the second one came through on Wednesday! Unfortunately he won’t show them off for a picture!

Sunday Tanner also mastered sitting up on his own. He has been doing it for about a week and a half, but he pretty much would fall over after only a few seconds…now he can sit there for as long as he likes!

Monday he fell off the couch – Mother of the Year, right here! I felt so bad….poor little guy! I called my husband right away and told him…he didn’t really make me feel any better….Thank God for girlfriends, every one of them told me that it’s happened to them…most of their kids fell off the change table though….which makes me feel a little better…at last he didn’t fall that far! If you look really close, you can still see a bit of the bruise on his cheek:(

Tuesday he had his first MumMum. I think he liked it….

Wednesday he played in the Jolly Jumper for the first time!


3.Yesterday I went on a bit if a shopping spree.

I was in desperate need of some new summer clothes, so I headed out to look for some new shorts and maybe a cute top or two. Well, I didn’t find any shorts, and only got one new t-shirt…what did I buy? 5 dresses, 2 tank tops and a scarf. Now, that might not seen so strange…unless you know me…I never very rarely wear dresses, but for some reason, I was all about them yesterday??? I’m thinking it has something to do with the fact that I’m feeling like a bit of a lazy slug, wearing my hair in a ponytail every day, and watching my ass grow as I sit around doing nothing! Whatever h reason, I’m looking forward to wearing my new clothes:)

Breakfast – another Chocolate Banana Green Smoothie! Yep, it’s that good!


Lunch – 1/2 Grilled Chicken Breast, slice of Cheddar Cheese, a Hard Boiled Egg, Grape Tomatoes, Snap Peas and a tbsp Hummus


Dinner – 100% Pure Beef Sirloin Burger on a Red Pepper Thin Bun


Water Consumption:
8 glasses

8.5 hours!

Breakfast – Chocolate Banana Green Smoothie. This is definitely my most favourite green smoothie ever! Only a few more days in my Green Smoothie Challenge… Wonder how many more of these I will have before the end of the month??? You can find the recipe here.


Lunch – Eat Clean Chicken Quesadilla Casserole. I made this dish a few weeks ago and wasn’t really that thrilled about it, so I put it in the freezer and forgot about it. Well, I pulled it out today, had a bit for lunch…with salsa, of course, and it was de-lish!


Afternoon Snack – 1/2 cup Vanilla Greek Yogurt and 1/4 cup Chocolate Love Crunch


Dinner – Grilled Chicken Wrap with Franks Hot Sauce, Lettuce, Tomato and Cheese


Evening Snack – David’s Tea – Cinnamon Hearts


Water Consumption:
4 glasses – need to work on this!

8 hours, but still feeling tired.

Clean Eating Challenge: Day 35

Breakfast – POM, Pineapple And Green Grape Green Smoothie

1/2 cup POM juice
1 cup green grapes
1 cup pineapple
2 cups spinach
1 tbsp chia seeds
1 tbsp hemp hearts
2 tbsp ground flax




Lunch – leftover Pizza (1 slice of Toppers Deluxe sans mushrooms, add hot peppers, and 1 slice of Toppers Turkey Pepperoni Sensation)


Dinner – Refrigerator Oats – didn’t feel like cooking and this was leftover from Sunday morning. Happy to report, tastes just as good after an extra day in the fridge.


Snack – 1/2 cup Vanilla Greek Yogurt with 1/4 cup Aloha Love Crunch.


Water Consumption:
6 glasses


6 hours…definitely. need. more.
