Clean Eating Challenge: Day 40!!

Day 40




Breakfast – Green Smoothie #29 – Strawberry Banana – today was the last day of the Green Smoothie Challenge – I had 29 smoothies in 30 days…not bad! I will definitely be continuing with the Green Smoothie – I totally loved them, and to believe 31 days ago, I had NEVER had one…Thanks Amanda for organizing this challenge and introducing me to the Green Smoothie!

Lunch – McDonald’s Breakfast Burrito Combo – no drink – on our drive north to visit my parent’s for the weekend, we stopped at McDonald’s to grab lunch – totally not clean:( and was kinda surprised at just how unhealthy a breakfast burrito could be…totally shocked to find out one sausage mcmuffin with egg has less calories and fat than two breakfast burritos. As you can see, my meal was a whopping 760 calories and 43 grams of fat…can you say d.i.s.g.u.s.t.i.n.g!


Afternoon Snack – Hard Boiled Egg and two Pumpernickel Flatbreads

Dinner – Pork Tenderloin with a Lentil, Rice, Cucumber and Tomato Salad and a Tomato and Cucumber Salad, a glass of Skim Milk

Sorry no pictures today – we were visiting my Mom out of town for the weekend and I totally forgot to take them. Oops!

Water Consumption:

6 glasses


4 hours – the kids did not do well sleeping at Grandma’s let’s hope for a better night tonight!!

Breakfast – Oatmeal Pancake with Chocolate Chips and Fresh Strawberries


Lunch – Bento Veggie Rolls I saw these being made on my way out of the gym this morning and had to have them. I love spring rolls! So good. I didn’t eat the dip though, I think it was some kind of peanutty thing, but I was a little nervous, so I totally skipped it!


Snack – 1/2 cup Vanilla Greek Yogurt and a 1/4 cup of Chocolate Love Crunch This is my new go-to snack…so good!


Dinner – Grilled Cheese Sandwich on Ancient Grains bread – too tired and too hot to cook…I guess that really just boils down to too lazy:(


Snack – Pumpernickel Flatbreads with Cheddar Cheese


Water Consumption:

9 glasses – much better today!


5.5 hours – another crappy night, could not fall back to sleep again. Boo!

Breakfast- Mixed Berry Banana Green Smoothie

2 cups baby spinach
1 cup frozen mixed berries
1 banana
1 cup almond milk
2 tbsp ground flax





Lunch – Vanilla Greek Yogurt and Chocolate Love Crunch – not really a substantial lunch, but at least it was healthy!


Dinner – Eat Clean Waffles with Fresh Strawberries I think I’ve posted the link to this recipe before, but here it is again. These super healthy waffles are pretty tasty when topped with fresh fruit – and according o my husband – when loaded with maple syrup too!


Water Consumption:
8 glasses

5.5 hours – this was probably the crappiest sleep I have had in the last 38 days. Both kids were up in the night and I could not fall back to sleep after feeding Tanner…I was up from 3:15 until after 5…at least the kids slept in a bit so I could at least get some sleep!

Breakfast – another Chocolate Banana Green Smoothie! Yep, it’s that good!


Lunch – 1/2 Grilled Chicken Breast, slice of Cheddar Cheese, a Hard Boiled Egg, Grape Tomatoes, Snap Peas and a tbsp Hummus


Dinner – 100% Pure Beef Sirloin Burger on a Red Pepper Thin Bun


Water Consumption:
8 glasses

8.5 hours!

Breakfast – Chocolate Banana Green Smoothie. This is definitely my most favourite green smoothie ever! Only a few more days in my Green Smoothie Challenge… Wonder how many more of these I will have before the end of the month??? You can find the recipe here.


Lunch – Eat Clean Chicken Quesadilla Casserole. I made this dish a few weeks ago and wasn’t really that thrilled about it, so I put it in the freezer and forgot about it. Well, I pulled it out today, had a bit for lunch…with salsa, of course, and it was de-lish!


Afternoon Snack – 1/2 cup Vanilla Greek Yogurt and 1/4 cup Chocolate Love Crunch


Dinner – Grilled Chicken Wrap with Franks Hot Sauce, Lettuce, Tomato and Cheese


Evening Snack – David’s Tea – Cinnamon Hearts


Water Consumption:
4 glasses – need to work on this!

8 hours, but still feeling tired.

Clean Eating Challenge: Day 35

Breakfast – POM, Pineapple And Green Grape Green Smoothie

1/2 cup POM juice
1 cup green grapes
1 cup pineapple
2 cups spinach
1 tbsp chia seeds
1 tbsp hemp hearts
2 tbsp ground flax




Lunch – leftover Pizza (1 slice of Toppers Deluxe sans mushrooms, add hot peppers, and 1 slice of Toppers Turkey Pepperoni Sensation)


Dinner – Refrigerator Oats – didn’t feel like cooking and this was leftover from Sunday morning. Happy to report, tastes just as good after an extra day in the fridge.


Snack – 1/2 cup Vanilla Greek Yogurt with 1/4 cup Aloha Love Crunch.


Water Consumption:
6 glasses


6 hours…definitely. need. more.
