Clean Eating Challenge: Day 31

Breakfast – Oatmeal Pancake with Fresh Strawberries.
Oh how I have missed you oatmeal pancake…Since starting the Green Smoothie Challenge on June 1st, I have pretty much been having smoothies to start the day. But today, shy on smoothie ingredients, I resorted to my  most favourite  breakfast ever! The Eat Clean Oatmeal Pancake.


Lunch – Green Smoothie # 21 – Chocolate Banana – can you say HELLO! This was freaking delicious! Might have to have it again tomorrow.

2 cups baby spinach
1 cup almond milk
1 frozen Banana
1 tbsp cocoa
1 scoop protein powder
2 tbsp ground flax


Snack – Eat Clean Chocolate Chip Cookie

Dinner – Grilled Chicken, Asparagus and Red Peppers


Water Consumption:
8 glasses

6.5 hours. Uninterrupted which was awesome, but not enough!

Clean Eating Challenge: Day 30

Wow, I can’t believe it’s been 30 days! Despite a few slip-ups here and there, I’m quite impressed with how I’ve done so far. Sticking to something for 40 days is hard…only 10 to go!

Breakfast – in sticking with June’s Green Smoothie Challenge, this morning I had a Strawberry Kiwi Green Smoothie. To be honest, it wasn’t my favourite, maybe because all the fruit was fresh so the smoothie seemed a bit runny…I don’t know… Oh well, here’s what I put in it

3 cups baby spinach
1 cup fresh strawberries
1 kiwi
1 cup almond milk
2 tbsp ground flax





Lunch – an Almond Butter Wrap. In a rush, with not much in the fridge, this was all I could come up with. 1 tbsp Almond Butter on a small Whole Wheat Wrap. Sorry, no picture…totally forgot as I scrambled out the door!

Dinner – leftover Steak with a Slice of Cheddar Cheese and 7 Kashi Pita Crisps – Zesty Salsa


Evening Snack – Eat Clean Chocolate Chip Cookie

Breakfast – Green Smoothie #13 Pom Pineapple

1/2 cup Pom juice
1 cup Pineapple
1/2 cup Greek yogurt
1 tbsp Hemp hearts
1 tbsp Chia seeds
2 tbsp Ground flax




Lunch– today we had a picnic lunch at the slash pad. We had carrot and red pepper sticks, ham and cheese wrap, Kashi Zesty Salsa crackers, and for dessert, an Eat Clean Chocolate Chip Cookie.


Snack – 2/3 cup Greek yogurt and 1/2 cup aloha granola


Dinner – Eat Clean Ham, Cheese and Broccoli Casserole


Snack -1/4 cup Love Crunch Organic Aloha Granola


Water Consumption:
9 glasses

7.5 hours, not enough! Up once to feed Tanner 😦

Lunch – Green Smoothie #13 – Mixed Berry Banana

2 cups baby spinach
1 cup Europe’s Finest frozen mixed berries
1 banana
1 cup unsweetened almond milk
1 tbsp hemp hearts
1 tbsp chia seeds
2 tbsp ground flax



Snack – Slice of Ham and a 1/4 cup Aloha Mix

Dinner- leftover Eat Clean Ham, Cheese and Broccoli Casserole


Snack – Eat Clean Chocolate Chip Cookie


Water Consumption:
10 glasses

8 hours of uninterrupted bliss!

Clean Eating Challenge: Day 21

Breakfast – Green Smoothie #10 – Seeing as we were away for the weekend, and there was nothing in the house to make smoothies this morning, I took the easy way out and headed to Booster Juice. I picked up a Strawberry Sunshine Smoothie which is made up of strawberries, passion fruit, guava, bananas and yogurt. I brought it home, poured it into the blender, added 2 cups of kale and mixed it up. It was d.e.l.i.c.i.o.u.s.!!


Lunch – Green Smoothie # 11 – Strawberry & Raspberry Protein Smoothie – one word… yummo!

2 cups kale
1 cup frozen strawberries
1 cup frozen raspberries
1/2 cup vanilla Greek yogurt
1 scoop protein powder
1 cup water




Afternoon Snack – one Eat Clean Chocolate Chip Cookie – yep, I showed a little restraint and actually only ate one. I’m thoroughly impressed with myself!


Dinner – leftover Pizza and Salad


Water Consumption:

Clean Eating Challenge: Day 20

Well, today marks the half way point in my Clean Eating Challenge. So far, I’m not doing too bad. Almost everything I have eaten has been clean, I’ve made a ton of new recipes – most of which have been quite enjoyable – and it hasn’t actually been too difficult to stick to. Of course, there have been a few issues with portion control – remember the day I ate 6 Eat Clean Brownies…man those things were good! And now I have a dozen Eat Clean Chocolate Chip Cookies sitting on the counter calling my name! Apparently I’m having a little trouble resisting those as well!!! They are going straight to the freezer once I’ve finished this post! Out of site, out of mind…right?? Ya…I’ll let you know how that goes!!!

Breakfast: Whole Wheat Bagel with Peanut Butter – Since the first of June, I have had a Green Smoothie for breakfast every morning – as part of the Green Smoothie Challenge hosted by Amanda over at Run for It – but since we were at a cottage this weekend, and travelling with a blender and all the fixings would have been a lot – especially since we had a car full of baby stuff and a dog – I decided to just skip the smoothie this morning and figured I would have one when we got home later in the day….which didn’t actually happen…so I’m going to have two tomorrow to make up for it!!

Morning Snack – Eat Clean Chocolate Chip Cookie


Lunch – another Eat Clean Chocolate Chip Cookie…yep, that was lunch…brutal, I know. But we were rushing back from the cottage so I could get to a CPR Course in the afternoon, and I didn’t leave myself enough time to either make something or grab something healthy on the way. And these cookies were just sitting in the car from the drive back…so I wolfed on down on the way there….


Afternoon Snack – another Eat Clean Chocolate Chip Cookie…yep, wolfed another one down on the way home….can you say PIGGY!!


Dinner – Thin Crust Deluxe Pizza and a Tossed Salad made with lettuce from our garden! This dinner wasn’t all that clean, but it was just one of those days…


Doesn’t that plating look great…my husband did it…he says it’s all about presentation…I guess I should make more of an effort with my pictures!

Breakfast: Green Smoothie #9 – This morning I changed things up a little and added some kale to my smoothie rather than the usual baby spinach. I’m not exactly sure what I think about it yet….it definitely didn’t blend up as well as the spinach, and taste-wise, I found it to be pretty overwhelming. I’m thinking 2 cups might be a little much??


2 cups kale
1 cup almond milk
1 cup Europe’s Best Frozen Mixed Berries
2 tbsp peanut butter

It was actually pretty good, but i’m a bit of a texture freak so the little kale chucks were a little distracting!

Morning Snack – Veggies and Hummus


Lunch – Grilled Chicken Breast Burger with Tomato and Lettuce on a Whole Wheat bun and 2 Eat Clean Chocolate Chip Cookies.



Afternoon Snack – Eat Clean Guacamole and Organic Blue Corn Tortilla Chips and a Corona. We were at my brother-in-laws cottage for the day/night…who can resist a corona at the cottage!


Dinner – Pork Tenderloin, Asparagus and Corn on the Cob
