Clean Eating Challenge: Day 40!!

Breakfast – Green Smoothie #29 – Strawberry Banana – today was the last day of the Green Smoothie Challenge – I had 29 smoothies in 30 days…not bad! I will definitely be continuing with the Green Smoothie – I totally loved them, and to believe 31 days ago, I had NEVER had one…Thanks Amanda for organizing this challenge and introducing me to the Green Smoothie!

Lunch – McDonald’s Breakfast Burrito Combo – no drink – on our drive north to visit my parent’s for the weekend, we stopped at McDonald’s to grab lunch – totally not clean:( and was kinda surprised at just how unhealthy a breakfast burrito could be…totally shocked to find out one sausage mcmuffin with egg has less calories and fat than two breakfast burritos. As you can see, my meal was a whopping 760 calories and 43 grams of fat…can you say d.i.s.g.u.s.t.i.n.g!

Afternoon Snack – Hard Boiled Egg and two Pumpernickel Flatbreads

Dinner – Pork Tenderloin with a Lentil, Rice, Cucumber and Tomato Salad and a Tomato and Cucumber Salad, a glass of Skim Milk

Sorry no pictures today – we were visiting my Mom out of town for the weekend and I totally forgot to take them. Oops!

Water Consumption:

6 glasses

Sleep:

4 hours – the kids did not do well sleeping at Grandma’s let’s hope for a better night tonight!!

Breakfast – Chocolate Banana Green Smoothie. This is definitely my most favourite green smoothie ever! Only a few more days in my Green Smoothie Challenge… Wonder how many more of these I will have before the end of the month??? You can find the recipe here.

Lunch – Eat Clean Chicken Quesadilla Casserole. I made this dish a few weeks ago and wasn’t really that thrilled about it, so I put it in the freezer and forgot about it. Well, I pulled it out today, had a bit for lunch…with salsa, of course, and it was de-lish!

Afternoon Snack – 1/2 cup Vanilla Greek Yogurt and 1/4 cup Chocolate Love Crunch

Dinner – Grilled Chicken Wrap with Franks Hot Sauce, Lettuce, Tomato and Cheese

Evening Snack – David’s Tea – Cinnamon Hearts

4 glasses – need to work on this!

Sleep:
8 hours, but still feeling tired.

Breakfast – Green Smoothie #22 – Chocolate Banana – Yep, yesterday’s was so good, I had it again! Yummo!

Lunch – Starbucks Protein Bistro Box – lately this has been my go to for lunch on the run. With white cheddar cheese, multi grain muesli bread, honey peanut butter spread, grapes, apple slices and a hard boiled egg, it’s perfect!

Snack – 1/2 Aloha Granola and 3/4 Greek Yogurt

Dinner – Eat Clean Cobb Salad – this recipe serves 4 but I adapted it for a single serving. I also subbed out the blue cheese for goat cheese and totally skipped the dressing. Oh, and I have no idea what jicama is, so I skipped it too!

Snack – my sister came over for a visit so we sat outside on the deck and enjoyed a yummy Corona.

Water Consumption:
8 glasses

Sleep:
9.5 hours – yep, hubby got up with the kids at 6:45 and I slept in until 8:30…it was AWESOME!

Breakfast – Oatmeal Pancake with Fresh Strawberries.
Oh how I have missed you oatmeal pancake…Since starting the Green Smoothie Challenge on June 1st, I have pretty much been having smoothies to start the day. But today, shy on smoothie ingredients, I resorted to my  most favourite  breakfast ever! The Eat Clean Oatmeal Pancake.

Lunch – Green Smoothie # 21 – Chocolate Banana – can you say HELLO! This was freaking delicious! Might have to have it again tomorrow.

Ingredients:
2 cups baby spinach
1 cup almond milk
1 frozen Banana
1 tbsp cocoa
1 scoop protein powder
2 tbsp ground flax

 

Snack – Eat Clean Chocolate Chip Cookie

Dinner – Grilled Chicken, Asparagus and Red Peppers

Water Consumption:
8 glasses

Sleep:
6.5 hours. Uninterrupted which was awesome, but not enough!

Wow, I can’t believe it’s been 30 days! Despite a few slip-ups here and there, I’m quite impressed with how I’ve done so far. Sticking to something for 40 days is hard…only 10 to go!

Breakfast – in sticking with June’s Green Smoothie Challenge, this morning I had a Strawberry Kiwi Green Smoothie. To be honest, it wasn’t my favourite, maybe because all the fruit was fresh so the smoothie seemed a bit runny…I don’t know… Oh well, here’s what I put in it

3 cups baby spinach
1 cup fresh strawberries
1 kiwi
1 cup almond milk
2 tbsp ground flax

 

 

 

 

Lunch – an Almond Butter Wrap. In a rush, with not much in the fridge, this was all I could come up with. 1 tbsp Almond Butter on a small Whole Wheat Wrap. Sorry, no picture…totally forgot as I scrambled out the door!

Dinner – leftover Steak with a Slice of Cheddar Cheese and 7 Kashi Pita Crisps – Zesty Salsa

Lunch – Green Smoothie # 18 – Peanut Butter and Banana with Green Grapes – we seem to have a ton of grapes in the house right now, so I thought I’d toss a few into today’s smoothie. Yummo!

Ingredients:
2 cups baby spinach
2 tbsp peanut butter
1 banana
1 cup green grapes
2 tbsp ground flax
1 cup almond milk

 

 

 

 

Dinner – leftover Grilled Chicken Fajita’s on Corn Tortilla’s

Evening Snack – PC Mint Chocolate Cone Totally NOT Clean, but really, really good! Back on track tomorrow!

Lunch – Green Smoothie # 15 – POM Pineapple. Yesterday’s Green Smoothie was so good, I made it again today. Yummo!

Ingredients:
1/2 cup Pom juice
1 cup Pineapple
1/2 cup Greek yogurt
1 tbsp Hemp hearts
1 tbsp Chia seeds
2 tbsp Ground flax

Evening Snack – one cup of David’s Tea – I’m not even sure what kind it was! My sister has been raving about this tea forever, so I went over and enjoyed a cup as we watched Nik Wallenda walk across Niagara Falls on a tightrope. Did you watch it? What did you think?
