Clean Eating Challenge – Day 5

Breakfast – leftover Clean Eating Waffles – pop them in the toaster and you’re good to go!

Morning Snack – 2 Chai Seed Peanut Butter Cookies


Lunch – after a busy morning out and about buying planks for out ‘veggie garden’ we had lunch at a local Mexican restaurant called Made in Mexico. If you live in the Newmarket Area, you should definitely eat here – its delicious! Trying to stick to my clean eating challenge, I opted for a Chicken Taco Salad….yummo! And to keep it clean, I didn’t eat the deep crisped bowl 🙂


Afternoon Snack – 2 Chai Seed Peanut Butter Cookies

Dinner – Eat Clean Sausage And Pepper Penne (from Clean Eating Comfort Foods 2012)


Evening Snack – 2 Eat Clean Caramel Coconut Chewy Bars

A Few Last Words Before Race Day!

So, tomorrow is THE BIG DAY! My first race since running my first (and only) marathon in September of 2007! I’m super excited…and a little nervous!

Originally I was training to run this race is under 2 hours – which would have been a PB for me…but, things got in the way and I did not get in as much running as I had hoped. That being said, the training I did do has more than prepared me for tomorrow’s run….but, a few weeks ago I decide to to change my whole race perspective and run with my sister to help her reach her goal of a sub 2:30 half. You see, my sister Cathy has trained really hard for this race (you can read all about it on her blog) and has SERIOUSLY improved in her running, but she still lacks a bit of the mental toughness required to compete a 21.1km race. She, (like pretty much everyone else) always runs better with someone…she just needs a little push sometimes, someone to get her running again after her one minute drink break towards the end of the race, someone to make her run up every hill, someone to distract her with mindless chatter…enter ME! I am super excited to run with my sister, we have done many races together, but have never actually run together. It’s going to be awesome!

So, here’s a little something to keep us both going as my sister I run the Toronto Women’s Half Marathon tomorrow…


So, that’s it. Everything we have worked so hard for comes down to tomorrow. We’re ready! We can do this! We will reach our goal of a sub 2:30 half marathon!

Clean Eating Challenge – Day 4

Breakfast – Clean Eating Waffles – My daughter absolutely LOVES pancakes, but this morning I didn’t have the ingredients necessary to make our usual Eat Clean Cottage Cheese Pancakes, so I poked around online and came across this recipe by The Gracious Pantry. These waffles were not only super easy to make, but really yummy and filling! We loaded ours up with fresh berries…de-lish! And as a bonus…we have leftovers to pop in the toaster for breakfast tomorrow!


Lunch – straight from the freezer to the oven…Eat Clean Chicken, Spinach and Ricotta Quesadilla. Quick and yummy!


Afternoon Snack – Chia Seed Peanut Butter Cookies – While the kids were napping I spent some ‘quality time’ on Pinterest…found a cookie recipe that used chia seeds and since I picked some up last week – and had no idea how to use them – I thought I’d give these cookies a try! So, Ryan and I whipped these up after her nap this afternoon. They are sooo good, and HEALTHY.


Dinner – Pork Tenderloin, Corn on the Cob and Grilled Asparagus – Seriously, does I get any better than that!


Evening Snack – 2 more Chia Seed Peanut Butter Cookies – At only 162 calories for TWO cookies, how can you resist!

Water Consumption:
8 glasses

7.5 hours, minus about a half hour to feed Tanner at 4:10 am

Why Clean Eating Really is a CHALLENGE!

So, last night my husband came home from work with “a treat”. Since I’m Eating Clean – and he knows it – I thought maybe he would come home with something I could enjoy too. Ya right!

This is what he brought home…


Seriously, would one package not have been enough?!?

He actually bought 8 packages, but he ate one WHOLE package on the drive home! No joke!

When I asked if we really needed EIGHT packages, he said he could not resist…less than $2 each at the Peak Freans Outlet! MEN!

Apparently he is going to be if NO help in my Clean Eating Challenge! Let’s hope I have the willpower to stay away from these delicious cookies for the next 36 days. And let’s also hope there are some left when I’m finished this challenge…although I seriously doubt there will be!

Breakfast Oatmeal Pancake with Fresh Strawberries


Morning Snack – Starbucks Protein Platter (I was not prepared to be out of the house as long as we were this morning, so I grabbed the healthiest on-the-go snack I could think of). It was really good, and was only $5.95 + tax….not much more than a chai latte…which I have not had since last Friday  …that’s gotta be a record!


Lunch – leftover Supperworks Black Bean and Brown Rice Wrap


Afternoon Snack – 12 almonds and a half cup of raspberries


Dinner – Eat Clean Chicken, Spinach and Ricotta Quesadillas – again this was another first for me, and although it tastes really good, it took FORVER to make! I ended up making something else for my daughter to eat since I didn’t actually finish making and baking these quesadillas until 8pm! Thankfully it made 8 extras which I’ve put in the freezer to pull out and bake in just 24 minutes!


Evening Snack – Eat Clean Caramel Coconut Chewy Bars – time to make a new treat, this one is super yummy, but I’m ready for something new!

Water Consumption:
10 glasses

7 hours…unfortunately my daughter has been waking up at 5:30 and coming into our room:( Definitely need to put a stop to that!

Three Things Thursday – Ready For Race Day!

Only 3 days to go until The Toronto Women’s Half Marathon! I am SUPER EXCITED and READY TO RUN! This week’s Three Things Thursday is all about race day!


Apparently I will be sporting a little Lululemon for this race…hehehe…its all so comfy and cool – I LOVE it!

Top – Lululemon Run Swiftly Tank
Shorts – Lululemon Run Speed Shorts
Bra – Lululemon Flow Y Bra
Hairband – Lululemon


Cliff Shot Energy Gels – Vanilla –                                                                                 The plan is to take one of these 45 minutes into the race and then the other 45 minutes after that.
Honey Stinger Energy Chews – I will be eating a few of these every walk break (at each  mile) after the one hour mark. They are just so yummy, I can’t don’t want to run without them!! 


Shoes – Asics Gel Nimbus 12 –                                                                                                      I have been running in Nimbus’ for a long time, and absolutely love them, they are so cushiony!
Watch – Garmin 410 – I just got this watch this week, it has one run in its history. I think I’ve got it figured out. I’m hoping to use the training partner to help my sister and I finish by her goal time!
Sunglasses – Ryder’s – These are also new…so much for not changing things up before race day! However, I may not need them, as the forecast is now calling for rain 😦 Refreshing but not so fun!
Waist Pack – FuelBelt – will be filled with water – sometimes the water stations just aren’t where you need them!

Let’s hope that is still the case AFTER the run!

10:30-6:15 up to feed Tanner at 2am, but fell back to sleep quickly – which has been very rare lately…
