For starters, let me just start off by saying…
This post is going to be short and sweet – it’s Friday and I’m exhausted! I’m actually hoping to be in bed by
9:00 9:30 I know…super lame, but what can I say!
So, really I just wanted to share with you the super simple, super fast and super delicious Eat Clean recipe I made for dinner yesterday (and was lucky enough to enjoy the leftovers for dinner today)!
Eat Lean Kung Pao Chicken from Clean Eating Comfort Foods 2012.
Here’s what you need:
- 12 ounces boneless, skinless chicken breast cut into 1 inch cubes
- 1/4 cup raw, unsalted peanuts
- 6 green onions, thinly sliced
- 2 tsp rice vinegar
- 1 Tbsp olive oil
- 1/2 tsp red pepper flakes
- 2 Tbsps low sodium soy sauce
- 3 garlic cloves, minced
- 2 tsps grated ginger
Here’s what you do:
First chop and mince your ingredients as it will cook very quickly. Heat the oil in a skillet or wok over medium high heat and add pepper flakes, chicken and peanuts, cook 5 minutes stirring frequently.
Stir in 1/4 cup water, soy sauce, garlic, ginger, green onions and vinegar. Bring to a simmer and cook for 3 minutes or until the chicken is no longer pink inside.
Serve over brown rice and that’s it. It seriously took about 15 minutes and was super yummy!
Well, that’s it! Happy Friday everyone, and Happy Victoria Day to all of my Canadian friends!
Enjoy the long weekend!!
